The bad news is that I made these on my lunch break and forgot to check my teeth when I went back in to work. The good news is that the giant chocolately spec between my two front teeth that I finally noticed an hour later didn’t even bother me because these bitches were that good.
Ingredients:
- 2 eggs
- 1 cup almond butter
- ⅓ cup + 1 ½ tbsp. Truvia
- ½ cup cacao powder
- ¼ tsp. baking soda
- 2 tsp vanilla extract
- pinch of salt
- Homemade fudge (see recipe below) (or you can use ½ cup chocolate chips)
Mix ingredients, spoon balls of dough onto cookie sheet, and bake for 10 minutes.
Homemade Fudge:
- ½ cup coconut butter
- 3 squares (.75 oz.) unsweetened baking chocolate
- ⅔ cup full fat canned coconut milk
- 2 tsp Truvia
- ½ tsp. vanilla extract
- pinch of salt
Put all ingredients except the vanilla extract into a saucepan and heat on low, stirring continuously until it’s all melted. Then, remove from heat and add vanilla.
