I’m a healthy eater and always eat clean and nutritious meals, but I often get into food slumps and eat the same thing over and over. Sometimes it’s because I’m momentarily obsessed with that food (i.e. Whole Foods chicken wings that I grubbed on for a solid two weeks every day after work) and sometimes it’s because I don’t have time to plan new meals, so I just make what I know. Well, this week, my slump was because of the make-what-you-know thing. But today, I decided to make a change (because the thought of eating another chicken salad wrap made me want to puke). Plus, I wanted something meatless. I’ve been eating a lot of chicken lately and whenever I take a break from meat for a few days, it always gives me an energy boost.
So, I ended up with this really delicious dish – and it’s so simple. It’s just sautéed spinach (cooked in organic sesame oil), sprinkled with coconut aminos (you can also use Bragg liquid aminos or tamari), onion powder, garlic powder, and sea salt, and chunks of grapefruit (added after you remove the spinach from the stove).
P.S. I don’t have a fancy camera and my iPhone didn’t quite capture the mouthwatering visual I was hoping for (this is better than I’ve done in the past though; my #foodporn pics usually look like a plate of boogers), but trust me, this is really, really good.
